Rocky Road Pie (3.5” Mini Crusts) 

Classic mini graham cracker pie crusts filled with layers of chocolate brownie filling, toasted mini marshmallows, pecans, dark chocolate sauce,  and E.L. Fudge® Original cookies.

Total Time: 1 Hour, 5 Minutes

Ingredients

  1. (6) 3.5" Keebler® Ready Crust® Mini Graham Cracker Pie Crusts
  2. 3 ½ cups prepared brownie mix 
  3. 6 E.L. Fudge® Original cookies
  4. 2Tbsp chopped pecans
  5. 1½ Tbsp dark chocolate sauce
  6. 36 mini marshmallows

Instructions

  1. Preheat oven to 350°F
  2. On baking tray, place 6 mini graham cracker crusts. Spoon 2 heaping tablespoons of prepared brownie mix into each crust.
  3. Bake for 12-15 minutes.
  4. While still warm from the oven, place 5-6 mini marshmallows on top of each pie, and carefully torch them with a culinary torch, being careful not to burn the brownie filling around them.
  5. Place 1 E.L. Fudge® Original cookie in each pie, sticking out at an angle, elf-front-side up around the top of the pie, resting in between marshmallows. 
  6. Sprinkle some of the chopped pecan pieces on each pie.
  7. Lightly drizzle the pie with dark chocolate sauce to finish.
