Pineapple Delights Recipe

Made with crispy, yummy vanilla wafer cookies and chilled pineapple juice, this dessert is a savory balance of sweet and fruity and crispy and smooth.

Ingredients

20 Keebler® Vanilla Wafers
1 can (8 oz.) crushed pineapple in juice, chilled
1/2 cup whipping cream
1 tablespoon sugar

Directions

Chill small mixing bowl and beaters of electric mixer.
In four dessert dishes layer half of the cookies. Top with undrained pineapple.
In chilled bowl beat cream and sugar on medium speed of electric mixer until stiff peaks form. Dollop cream on top of pineapple. Sprinkle with remaining cookies.
