Fruit-and-Ice-Cream-Filled Cookie Sandwiches

Ice cream and fresh fruit wrapped in Keebler® Chips Deluxe® Original cookies, then dipped in chocolate and sprinkled with your choice of nuts, toffee or sprinkles.

  • 2 cups vanilla, chocolate, or strawberry ice cream
  • 16 Keebler® Chips Deluxe® Triple Chocolate cookies
  • 1/2 small banana, thinly sliced; 1/2 cup thinly strawberries; or a combination
  • 1 cup semi-sweet chocolate morsels
  • 1 tablespoon vegetable oil
  • Finely chopped nuts, toffee bits, and/or multi-colored sprinkles (optional)


1. Scoop about 2 tablespoons ice cream on the bottoms of 8 of the KEEBLER CHIPS DELUXE Original cookies.

2. Press fruit slices into ice cream. Top with the remaining 8 cookies, bottom sides down, pressing lightly to make sandwiches. Place on wax-paper-lined baking sheet. Loosely cover and freeze for 1 to 2 hours or until firm.

3. Meanwhile, in small microwave-safe bowl combine chocolate morsels and oil. Micro-cook at high for 1 to 1 1/2 minutes or until melted, stirring every 30 seconds. Dip half of each cookie sandwich into chocolate mixture. Sprinkle with nuts (if desired). Return to wax-paper-lined baking sheet. Loosely cover and freeze about 10 minutes or until chocolate is set.

4. Individually wrap each cookie sandwich in plastic wrap. Freeze for up to 1 month. Before serving, remove from freezer and let stand for 10 minutes.
