Fudge Shoppe™ Fudge Stripes™ Coffee Cake

  • 1/2 cup chopped pecans or walnuts
  • 1 package (18.25 oz.) yellow cake mix without pudding in the mix
  • 1 pacakge (3.4 oz.) vanilla instant pudding & pie filling mix
  • 2 eggs
  • 3/4 cup vegetable oil
  • 1/2 cup reduced-fat sour cream
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 16 Keebler® Fudge Stripes™ Original cookies
  • 1 1/2 cups powdered sugar
  • 1/4 teaspoon vanilla
  • 1 to 2 teaspoons milk
  • 4 Keebler® Fudge Stripes™ Original cookies


1. Grease and lightly flour 12-cup fluted tube pan. Sprinkle pecans in pan.

2. In large mixer bowl combine cake mix, pudding mix, eggs, oil, sour cream, cinnamon and 1 teaspoon vanilla. Beat on low speed of electric mixer for 1 minute. Increase speed to medium. Beat for 1 to 2 minutes more or until combined. Stir in 16 broken KEEBLER FUDGE STRIPES cookies. Carefully spread over pecans in pan.

3. Bake at 350°F for 50 to 60 minutes or until toothpick inserted near center comes out clean. Cool in pan on wire rack for 15 minutes. Remove from pan. Cool completely.

4. In small bowl stir together powdered sugar and 1/4 teaspoon vanilla. Stir in enough milk to make of thick drizzling consistency. Drizzle over coffee cake. Garnish with 4 quartered cookies.
