Easy Cheesecake Bread Pudding

This home-style dessert features luscious custard baked around cubes of brioche bread and cheesecake-filled cookies. Topping it all is a warm, homemade caramel sauce.

Ingredients

  • 5 eggs, slightly beaten
  • 2 cups sugar
  • 1 cup whole milk
  • 1 cup whipping cream
  • 2 teaspoons vanilla
  • 3 cups cubed brioche bread
  • - or -
  • 3 cups cubed challah bread
  • 12 Keebler® Cheesecake Middles™ Original Graham cookies (chopped)
  • - or -
  • 12 Keebler® Fudge Shoppe® Cheesecake Middles Dark Chocolate Graham cookies (chopped)
  • 1 cup firmly packed brown sugar
  • 1/4 cup butter (no substitutes)
  • 2 tablespoons water
  • 1/3 cup whipping cream

Directions

1. In large bowl whisk together eggs, sugar, milk, 1 cup whipping cream and vanilla.

2. In 13 x 9 x 2-inch baking pan coated with cooking spray place bread cubes. Gradually pour milk mixture over bread cubes. Sprinkle with KEEBLER Cheesecake Middles Original Graham cookies. Bake, uncovered, at 350°F for 35 to 45 minutes or until knife inserted near center comes out clean.

3. Meanwhile, prepare caramel sauce. In small heavy saucepan combine brown sugar, butter and water. Cook and stir over medium heat until boiling. Boil for 4 minutes, stirring frequently. Stir in 1/3 cup cream. Drizzle over warm bread mixture. Let stand for 10 minutes. Serve warm.
